Granny Smith

is known as the “green apple” or “the apple for diabetics”  in that is has very little sugar and is very sour. It is almost exclusively cultivated in the valley because if it is grown in the hills it becomes a redish colour.

It was derived in an isolated nursery owned by the Smith’s in Ryde near Sydney (Australia) in 1924.

  is firm, crispy, very juicy and bitter in taste, not very sweet or aromatic.

The conservation of these apples can take  place  in the refridgerator for up to 6 months and with the more sophisticated method of (ULO) up to 9 months. If stored out of the refridgerator (for example in the cellar) they can last up to Christmas.
